GALLIPOLIS — What a difference a small piece of paper — or lack thereof — can make.

The grand opening of new downtown restaurant Nybble Café has been temporarily delayed after owner Bryan Blair received word that a process he thought was completed and approved actually had not. The café was to open to the public today.

Blair said that he recently went through the process with the State of Ohio Building Department to secure the Certificate of Occupancy necessary to open the café to the public, and since he had received paperwork from the agency, he thought Nybble was set to open. Blair said that he learned this week that until he receives the actual 5x7 slip of paper, he is not allowed to open the doors.

“It’s a matter of a simple piece of paper that I thought was handled,” said Blair. “It’s not a huge problem. It’s just a speed bump. We have to comply with state regulation.”

Blair said that he hopes to have a handle on the approximate rescheduled time of the grand opening by the end of the week. The Gallipolis Daily Tribune will report the updated information as soon as it becomes available.

Blair, who has a background in human resources and business, noted that the restaurant will sell café-style food, such as salads and flatbread sandwiches, and will enable its customers to access menus and make their orders via iPads at the tables.

Consistent with the aim of the Digital River Project, which has supported the new project, the menu will also have a “techy” theme, featuring a signature dish called the Megabyte, and the establishment name itself has a double meaning. As well as obviously being the homophone for the word ‘nibble,’ it’s a term that refers to a unit of computer memory.

“Technology plays an important role with the Digital River Project,” Blair commented. “It’s all about improving the quality of life for everyone. People in this area are seeking the change that the project is trying to provide. Its members are seeking to bring the community together and think of Gallipolis as an incubator for prosperity, bringing in new business.”
